The most delicious dip mixed with roasted tomatoes is a match made in heaven. If you have never tried whipped feta make sure you add it to your list it is delicious

Ingredients

- π 500g cherry/perino tomatoes
- π 1tsp of olive oil you donβt have to measure though

- π 1tsp of garlic powder, 1tsp of onion powder, 1 tsp of italian herbs
π 250g Of Fetta in oil (the container will say 250g) I used the Melbourne Cheese Co but there is plenty of brands
- π 2 tsp of oil use this from the feta container
- π *2 cloves of garlic but only if your cheese doesnβt have garlic in it. Mine had garlic & herb so I donβt add additional
- π 1/2 lemon juiced
- π 3/4 cup yogurt I useΒ @tamarvalleydairy
- π Salt & pepper to taste
- π Baguette or Garlic Bread
Directions
π start by roasting your tomatoes, preheat your oven to 200c get your cherry/Perino (any small flavourful tomatoes will do) add them to a roasting dish and add about 1tsp of olive oil you donβt have to measure though then 1tsp of garlic powder, 1tsp of onion powder, 1 tsp of Italian herbs and mix well, try to have them on 1 layer not overlapping & pop into the oven for about 45 mins flipping part way. You want them to get some good roasted colours if they need longer just leave them on for longer
- π While thats roasting get the whipped feta ready, add to a blender or stick mixer the whole feta cheese in, 2 tbsp of the oil from the feta also picking up some of the garlic & herbs, the yogurt and a good squeeze of 1/2 a lemon if its a biv one just use a 1/4 you can add more later. Add a tinh dash of salt & pepper not too much though again you can add more if needed
- π And mix all together until its nice and smooth and add to your serving bowl, it will thicken as it sits but can be served right away
- π add your roasted tomatoes to a bowl and serve with bread, garlic bread or even crackers
