This is a ricotta lovers dream dip, it is smooth and creamy and the perfect dish to add to your cheese platters or serve with veggies for the holiday season or really any season because it is so good! You need to make this one
Ingredients
- π 500g of good quality ricotta i get the big tubs that are thicker not the smooth kind from the supermarkets
- π 1tbsp of oil
- π 1/2 Lemon Squeezed
- π Salt & Pepper to taste
- π baguette or crostini I used theΒ @redrockdeli_ausΒ ones for something did different
- Onions:
- π 1 Large Onion
- π 1 Tbsp of oil
- π 2-3 tbsp of water
- π A couple of rosemary sprigs
Directions
π Start by slicing your onions, heating your oil on a low-medium heat in the frypan and adding the onions & rosemary, start to brown off you want to cook this on a lower temp so they brown up not burn. Once the oil ie gone you can add a couple of tbsp of water, it helps cook them. Repeat if needed and cook for approx. 20-25 mins stiring throughout. These are a slow cook on low
π To make the Ricotta, at it and the oil, salt & pepper not too much salt just a dash and the lemon to a blender or food processor and blend for about 2-4 minutes, mine took about 3-4 minutes it just depends on the blender. Scrape down half way through too but blend until its all silky smooth.
π You can add a dash more salt or a squeeze of lemon is you need mine was fine though
- π Once blended add to a bowl, place onions on top and serve with baguette, garlic bread, crostiniβs or even crackers

Recipe Note
- You could add some garlic or herbs to the ricotta if you like as well but it is great without too
- You can also cook more onions and mix it through if you like, I just placed mine on top.
- This is fantastic as shown above but also fantastic on some toasted sourdough with roasted tomatoes
- You can serve this with veggies too and it would be delicious if you popped it underneath on the plate with veggies all over the top
