Whipped ricotta is such a simple one to make for an easy side that looks fancy. It can be used in so many different dishes and uses simple ingredients. I use this recipe a lot through Christmas and the holiday season but also throughout the year for different occasions. You can add it to charcuterie board as a dip, with baked veggies for a twist or even on toast for breakfast

Ingredients
- 500 g Ricotta (*See note 1)
- 1 tbsp of olive oil
- ½ Lemon Juiced
- Salt & Pepper to taste
Directions
- Add the ricotta, olive oil, salt & pepper, just a dash of these both and the lemon to a blender or food processor and blend for about 2-4 minutes, mine took about 3-4 minutes it just depends on the blender as they are all different . Scrape down half way through too but blend until its all silky smooth and tastes well mixed
- You can add a dash more salt or a squeeze of lemon if you need once it is mixed but it should be find as is.
- Serve up and enjoy. Pop any left overs in a airtight container for up to 3-4 days. It may separate a little which is fine as long as it isn’t sour smelling or tasting.
