This 5 Minute BBQ Chicken Cous Cous is such a great one for busy days when you really don't have time to think about lunch. Which honestly is me most days. I love cooking but I don't have time to cook a big lunch or spend 30 minutes prepping my lunch so this is a great option for those days. Using the store-bought BBQ chicken saves so much time and the cous cous is quick to cook as well as adding some carbs to keep you fuller

5 minute BBQ Chicken Cous Cous Salad Recipe

Ingredients

  • 1 BBQ chicken you will have leftovers, approx 200g (*See note 1)

  • 2 Tbsp Stuffing from your chicken

  • 1/2 capsicum diced

  • 1/2 cucumber diced

  • 200-250g Pack cherry tomatoes sliced into 1/4

  • 100g couscous

  • 150g boiling water

  • Approx. 50g Beerenberg farm creamy Caesar dressing (or your fav dressing)

  • Approx. 20g of cheese to grate over the top (*see note 2)

Directions

  1. Pop your couscous with boiling water, mix & cover for 5 mins (see note 3 for reel on how to make cous cous)

  2. While that’s resting chop all your salad & break apart your chicken, I did approx. 80-100g per bowl, I like to use the breast for this. Add the stuffing for extra flavour, if you don’t have stuffing it doesn’t matter just skip that

  3. After 5 mins when your couscous is done add it on the bottom to your bowls, then your salad, chicken broken up,

  4. Grate your cheese on top & then your dressing. I do about 25g per bowl but measure with your heart with this and feel free to use any dressing you like.
