This 5 Minute BBQ Chicken Cous Cous is such a great one for busy days when you really don't have time to think about lunch. Which honestly is me most days. I love cooking but I don't have time to cook a big lunch or spend 30 minutes prepping my lunch so this is a great option for those days. Using the store-bought BBQ chicken saves so much time and the cous cous is quick to cook as well as adding some carbs to keep you fuller
Ingredients

1 BBQ chicken you will have leftovers, approx 200g (*See note 1)

2 Tbsp Stuffing from your chicken

1/2 capsicum diced

1/2 cucumber diced

200-250g Pack cherry tomatoes sliced into 1/4

100g couscous
-
150g boiling water
-
Approx. 50g Beerenberg farm creamy Caesar dressing (or your fav dressing)

Approx. 20g of cheese to grate over the top (*see note 2)
Directions
Pop your couscous with boiling water, mix & cover for 5 mins (see note 3 for reel on how to make cous cous)
While that’s resting chop all your salad & break apart your chicken, I did approx. 80-100g per bowl, I like to use the breast for this. Add the stuffing for extra flavour, if you don’t have stuffing it doesn’t matter just skip that
After 5 mins when your couscous is done add it on the bottom to your bowls, then your salad, chicken broken up,
Grate your cheese on top & then your dressing. I do about 25g per bowl but measure with your heart with this and feel free to use any dressing you like.

Notes & FAQs
- BBQ chicken is the pre-cooked chicken from the supermarkets or your local charcoal chicken. If you don't have one or don't want to buy one you can use left over roast chicken from your own baked chicken or use some chicken breast cooked up
- You can use any cheese you like for this, even a fetta etc would be delicious

Q. Can I use a different dressing?
A. Yep you can use whatever you like, mayo, a mustard, a herby dressing. Anything you like on this
Q. Can I add different salad?
A. Yes! go for it, you can add whatever you like or have on hand.
Q. Can I make this in advance?
A. Yep you sure can you can chop all your veg, cook your cous cous etc and then just pop it together. Or you can make the whole salad and pop it into the fridge ready to go. This can be eaten hot or cold, you can take this with you to work etc but just keep it in the fridge or with a ice pack/brick so it stays fresh if its warmer weather.
