I don't have a huge amount of time to be making lunch everyday so I try to keep things as simple as possible but I still want something that fills me up and tastes good while not taking long to make. And using the Arnott's Salada's as your base for this tuna mix is a great way to mix up lunch but it also tastes delicious.
Ingredients

2 Arnott's Salada biscuits (white or wholemeal)

1 tin your fav Tuna (*see note 1)

5-6 Cherry tomatoes

¼ Red Onion

6 Jalepeno’s (optional)

¼-½ Avocado

25g Cesar Dressing (*see note 2)

Approx. 40g or a handful or rocket
Directions
Drain your tuna and pop into a bowl, chop your salad ingredients
Add to your bowl with your tuna and then add your dressing and give it a good mix around
Mash your avocado (you can also slice if you prefer) and add on first to the Salada biscuits. You can add as much or as little as you like
Then add your tuna mix, a good dash of salt and pepper and then your rocket
That’s it and enjoy! This one is best serves and enjoyed right away

Notes & FAQ's
- You can use any flavour tuna you like for this dish, I personally just like using the spring water ones. But if you want a flavoured one go for it. You can also use Salmon if you prefer too
- I use the Beerenberg Creamy Caesar dressing, but you can use a mayo or any other dressing you like
Q. Can I add different salad in?
A. Yep you can do, you can add whatever you have in the fridge or any flavours you like and you don't need to add the jalapenos either these are optional
Q. Can I make these in advance?
A. I wouldn't recommend it, you can make the salad ready to go then just assemble them at lunch time but I wouldn't put it on the crackers until you are going to eat it.
