When my favourite granola disappeared from the shelves I decided to make my own, and now I am not going back it is absolutely delicious. It is also so simple to make and you can sub the nuts for any that you like.
Ingredients

3 Cups of Rolled Oats

115g Coconut (½ cup)

190g Honey (½ cup)

½ Tsp Of Cinnamon

1 Tbsp Sesame Seeds
-
1 Tsp Vanilla Essence
1 Cup of Nuts (Grams Below)

55g Flaked Almonds
-
20g Crushed Pistachios
-
30g Macadamia
Directions
Pre-heat oven to 175°C (350°F)
Melt your coconut oil in the microwave for about 10-15 seconds you only want it melted not hot or bubbling. If it’s hot where you are and your coconut oil is already melted from the heat skip this step
Line a 13x18 inch sheet pan with baking paper, I use a little butter so it sticks. If you don’t have one big enough just use 2 smaller pans or cook this in 2 batches. We need a larger pan so it crisps up properly
Mix all your dry ingredients together well
Then add in your coconut oil, honey and vanilla and mix really well together
Pop into your tray and spread into a thin layer. Push down a little bit so it joins together a bit and we get those crispy clumps
Bake away for approx. 20 mins, half way through you want to give it a good mix and then press down a bit again
Keep an eye on your granola it takes about 20 mins but ovens can be off, so we want it golden not burnt
Once cooked leave it to cool completely, don’t be tempted to move it or shake it around. Granola keeps hardening as we take it out of the oven so if you move it around it can become soft
Once completely cooled break it up and pop into an airtight container in your pantry away from direct sunlight for about 2 weeks
And enjoy, this is delicious with yoghurt and berries for breakfast
