Such a simple salad that is quick and easy to make but also uses up those left overs from the night before
Ingredients
- π₯ A big Handful of baby spinach

π₯ About 3 heaped Tbsp of left over veggies & chicken I used my leftovers from the night before tray bake but you can add any you like even ones from a roast will be delicious
- π₯ About 10 bocconcini halved

π₯ Your fav dressing i use Berenberg Farm ranch dressing
Directions
Heat your veggies and chicken up for a couple of minutes until they are heated through, you can have this cold as well
Add your spinach into your bowl and chop your bocconcini in halves and add to the bowl also
Add your warmed ingredients and then add the dressing over top as much as you like

- Such a simple salad and you can use anything you like for the veggies as well, you can also use just veggies instead of chicken if you like
