I love a Salad in winter but it needs to have some warmer elements to bring it together and make it feel more hearty. And this Roasted pumpkin and chickpeas combined with fresh salad ingredients makes the perfect winter salad. Or add some fresh tomatoes, cucumber etc to make a perfect Summer salad or BBQ side

Roasted Pumpkin & Chickpea Salad Recipe

Ingredients

  • 100g of rocket

  • 1 (1/4) Kent pumpkin sliced

  • 150g Semi Sundried Tomato

  • 1 x 400g can chickpeas rinsed

  • 2 tsp Italian herbs

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 200g approx. left over chicken or cooked chicken breast

  • 2-3 tsp olive oil

  • Dressing of your choice, a nice creamy ranch, yoghurt dressing is delicious with this

Directions

  1. Preheat your oven to 180°C (360°F)

  2. Slice your pumpkin into slices then in half to smaller slices or smaller wedges

  3. Add about 1-2 tsp olive oil, 1 tsp Italian herbs, 1/2 tsp onion powder, 1/2 Tsp of garlic powder and give it a good mix. Pop on an oven safe tray with baking paper and bake away for approx. 45-55 mins until your pumpkin is cooked and golden

  4. Once you put that in the oven drain & rinse your chickpeas, pat dry and add about 1 tsp olive oil, your other 1 tsp Italian herbs, 1/2 tsp of onion & garlic powder and pop onto your oven safe tray with baking paper and bake in the oven for about 30 mins until crispy. Give them a stir half way through

  5. Once cooked add your rocket, pumpkin, chickpeas, semi sundried tomatoes, and chicken to your salad. I used left over chicken which you can heat up or cook some fresh.

  6. Dress with your favourite dressing and serve
